Oh My! Chicken Pot Pie!

I was visiting Tina at Cherry Hill Cottage where she shared this yummy comfort food recipe I just had to make! Oh My, was it easy and yummy! The house smelled so good and hubby LOVED it to!
It's homemade and made with love!
I had a couple of gals here goes!
The Turquoise 4 qt. dutch oven is from the Martha Stewart Collection. I bought it & pink dish(s)from HomeGoods, my favorite place to shop! Bread Tin, at Tom's Farms here in CA. Chicken Pot Pie

3 cups cut-up boiled chicken breast (about 4)
1 1/2 cup chicken broth (broth from chicken breast or can)
1 can cream of celery soup
1 can cream of chicken soup
1 16 oz. frozen mixed vegetables (thawed or warmed)
1 onion chopped
1 stick of butter
(A little change I made to the recipe)
Saute' onions in extra butter until soft.
Mix all the above and pour into a greased casserole dish.
Mix 1 1/4 cups Bisquick, 1 stick melted butter, and 1 cup milk. Pour mixture over above chicken mixture.
Bake at 350 degrees for 1 hour or until golden brown.

Camping in the desert with Sisters on the Fly!

Here are my trailer pictures I promised from this past weekend camping with my group
Sisters on the Fly in Quartzite, AZ. I have shown pictures of my trailer in the past, but these are new pics from our recent trip. For those of you who have never met ButtonWillow...This is my little 13 ft. 1957 Jewel! I named her ButtonWillow and I love her to pieces! When not using her camping, she is parked on our property and I go sit in her to crochet, read or watch a vintage movie. Yes, I own the Long, Long Trailer with Lucy & Desi. My Bedroom. I made most of the pillows. I LoVe my feather bed! Samantha loves it to! My kitchen. Look at that stove! I have 4 burners, oven & a broiler! What else does a gal need?! LOL! Desert Dutch Oven Diva's~Sisters on the Fly

Yes, she is a Sister to! Oh, what fun she is! This passed weekend I went to a Sisters on the Fly outing held in the desert of Quartzsite, AZ. It was the 4th annual "Desert Dutch Oven Diva's" outing, sponsored by the AZ Sisters. This one is a Sister/Mister outing, so our hubby's got to come! What a wonderful time we had, showing off our trailers, eating, singing around the fire (my hubby played his banjo & guitar!), eating, gabbing, shopping, dutch oven cooking and more eating! I entered in the dutch oven cook off and won a 3rd. place ribbon for my White Chili! Boy, was I excited! Several of us caravan together coming & going. It is always so fun to see peoples faces as they see us coming down the highway in our little vintage trailers!

Recipe requested, so here goes...
White Chicken Chili
by my Daughter Shelli
4 boneless, skinless chicken breast
1 med. yellow onion, chopped
3 teaspoons garlic powder
2 tablespoons vegetable oil
4 cans - 15 1/2 oz. Great Northern Beans, rinsed & drained
2 cans - 14 1/2 oz. chicken broth
3 cans - 4 oz. chopped green chilies
2 teaspoons salt
2 teaspoons ground cumin
2 teapoons dried oregano
2 teaspoons pepper
1/2 teaspoon cayenne pepper
2 cups (16 oz.) sour cream
1 cup (1/2 pint) whipping cream
*Topping - Fritoes & shredded cheese
In a saucepan, saute chicken, onion & garlic powder in oil until cooked. Add beans, broth, chilies & seasonings. Bring to a boil. Reduce heat & simmer uncovered for 30 minutes stirring occasionally. Remove from heat & stir in sour cream and whipping cream. Let stand for 10 minutes for sause to thicken. Serve immediatley.
In a large saucepan, saute chicken, onion & garlic powder in oil until cooked. Put chicken into a crockpot & add all other ingredredients EXCEPT sour cream and whipping cream. Heat then add sour cream & whipping cream. Turn on "warm" for hours.
***Dutch Oven
Same as above but heat on coals or an open fire. Bring to a boil. Take dutch oven off coals and add sour cream & whipping cream. Let stand 10 mintues before serving. I used 7 coals on bottom and 17 coals on top for about 1/2 hour and stirred a couple times.
Don't forget the Fritoes & shredded cheese! Yum!
