One of my favorite meals my Mother made the family growing up was Stuffed Bell Peppers. What a wonderful comfort food! Put the ingredients on your shopping list! Sooooo yummy!
Mom's Stuffed Bell Peppers
4-6 medium size green bell peppers
1 pound lean ground beef
2 cups pre-cooked rice
1 teaspoon garlic salt
1/4 teaspoon pepper
1 chopped onion
1 can (8 oz.) tomato sauce
dash of Worcestershire sauce
1 1/2 cup grated Cheddar cheese
Cut tops off peppers, remove seeds and precook for 5 minutes in boiling water. Brown beef, onions, garlic salt, and pepper together. Add rice, tomato sauce, Worcestershire sauce and half of the cheese to mixture. Fill peppers. Top with other half of grated cheese and sit upright in a baking dish. If you have extra meat mixture, place in dish around the peppers. Bake at 350 degrees for 35-40 minutes.
*You can also add canned: mushrooms, diced tomatoes and sweet corn.
